After marinating a picnic roast for 3 days I made my version of Pernil. The house smells so good right now. I always use the leftovers for pulled pork sandwiches.

i remember a russian deli where i grew up. the meat counter had regular meats/cheeses but then stuff i don't do, like head cheese and funky bologna type meats.
Yeah no! It was the good stuff not head cheese

Basil is growing like crazy so there was finally enough to make pesto pasta for lunch. Had forgotten how delicious it is.

My uncle calls it "dirty keto" - some carbs, but limited to a certain number of grams per meal. Basically low-carb. I visited him and my aunt for the 4th of July and he eats a brand of keto bread called 647. It actually tastes pretty good. I have to find a loaf and replace my current addiction - hearty white bread.

I'm experimenting with homemade froyo tonight. I blended some nonfat plain yogurt with sucralose, canned pineapple and half & half. It should finish freezing tonight; I'll let y'all know how it came out. It's still a bit soft.

I made the mistake of buying two; it doesn't work out because one always spoils.

we are only two at home and i have to be very careful when buying fruits and vegetables, because i hate to throw out food.

i made brownies today, and we also had an affogato. delicious.
