Al Pacino in every movie, one could say.

Oh oh oh, I forgot one of my favorite performances ever: Edward Norton in Primal Fear!!!

Pure genius. Has anyone seen that movie?

And of course, my all time favorite: Andi Garcia in Just The Ticket.

there are way too many to name... agree with most of the ones mentioned already - pacino, de niro, blanchett, etc...
the ones that come to mind right now are:
john revolta in 'pulp fiction'. as much as i hate the fat fuck, i have to admit he's brilliant in that, as is samuel l.
hell, pretty much anyone in any tarantino movie, he sure does know how to get the best out of his actors.

bill murray in 'lost in translation' and 'the life aquatic'

    ewan in 'trainspotting'

tim robbins and patricia arquette in 'human nature'

john cusack, cameron diaz, catherine keener in 'being john malkovich', totally agree with whoever said chris cooper in 'adaptation'.

helena bonham carter in pretty much anything but she was particularly amazing in 'the wings of the dove' and 'fight club'

jeremy irons in 'chinese box', 'reversal of fortune' and 'dead ringers'

    ralph fiennes in 'spider'

marcello mastroianni in '8 1/2', 'divorce, italian style', 'occi ciornie' and 'i don't want to talk about it'

johnny depp in 'the libertine' (even if the movie is not that great, his performance is bloody brilliant), 'before night falls', 'fear and loathing in las vegas' (benicio is pretty brilliant in that too), 'ed wood', 'arizona dream'...

joaquin phoenix and geoffrey rush in 'quills', and hoaquin again in 'clay pigeons'

robert downey, jr. in 'chaplin', 'kiss kiss bang bang', among others. love the man

val kilmer in 'the doors', 'the salton sea', 'heat'

and there's way more but the list is long enough

I agree with Chilly Willy, Al Pacino in any movie is a great performance. I love him in Godfather pt II and Scarface.
    Robert DeNiro- Godfather Pt II
    Joaquin Phoenix- Gladiator
    Julia Roberts- Steel Magnolias
Ellen Burstyn- Requiem For a Dream (also Jennifer Connolly and Jared Leto rocked in that movie as well)

Oh my GODS, he was incredible in that movie. So disturbing and so phenomenal. Wowee wow wow.

Two of my favorite performances EVER are Jeff Bridges as The Dude and John Goodman as Walter Sobchak in The Big Lewbowski. That was the best performance Bridges ever gave. I guess The Academy overlooked it because, hey, if you're going to have someone puffing on a joint, it has to be tragic.

    I also love:

Elizabeth Taylor in Who's Afraid of Virginia Woolf?
    Claude Rains in Notorious
Sir Ian McKellan in Lord of the Rings
    Anthony Perkins in Psycho
    Catherine Zeta-Jones in Chicago
    F. Murray Abraham and Tom Hulce in Amadeus
Robert Walker, Strangers on a Train
    Robert Mitchum, Cape Fear
Theresa Wright, Shadow of a Doubt
Cate Blanchett, Elizabeth (<-- holy schnikes!)
    Cary Grant, Bringing Up Baby....

    Someone smack me....

OH! And Morgan Freeman and Tim Robbins in The Shawshank Redemption---man that movie didn't have one weak performance, not one.

And John Cusack in Grosse Pointe Blank.

And Clark Gable and Claudette Colbert in It Happened One Night.

And John Hurt in The Elephant Man.

And Tom Hanks in You've Got Mail.

....What about voice over work? I love Judi Dench as Miss Lilly in the Angelina Ballerina episodes. Has anyone else seen those?

Also...I hate Robin Williams, but he did an AMAZING job as the Genie in Aladdin.
