I would substitute the blue cheese for something milder. You can also leave out the bacon, because that tends to be salty too. I made them with sharp cheddar and turkey bacon and they were very tasty. You could also add sour cream.
And I wouldn't be adding any salt to the potato -- I find people put salt and pepper on their food even if it is already properly seasoned, and that of course makes it too salty or too peppery or whatever.
