The BEST pumpkin cookies, my friend introduced me to this recipe last year and I've been making it a lot this fall for events, bake sales etc. Everyone loves them.


Ann Walser’s Pumpkin Cookies

Makes ~3 Dozen

Cream together:
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
Add
1 teaspoon vanilla & mix.
Add in
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Drop by teaspoons onto pan. Bake @ 350 degrees for 10 minutes on ungreased pan.

Frosting
In small saucepan, mix together:
3 tablespoons butter
4 tablespoons milk
½ cup brown sugar
Boil for 2 minutes, stirring constantly


Remove from heat and let cool slightly
Add:
1 cup powdered sugar
¾ teaspoon vanilla

Beat well until thickened and frost cookies

My only note is with the frosting, I found it very much like a glaze with only the 1 cup of powdered sugar for all that liquid, I thickened it up with a lot more powdered sugar, like another cup and a half to 2 cups, and then dipped the top of the cookies in the glaze. I also tried it with some maple extract instead of vanilla which turned out really yummy too.

Second note is to definitely use the tsp to drop the cookies, they are really sticky. Don't worry about them looking smooth or anything, they should look a little lumpy, they will sort of even out in the oven.

You could also add walnuts to those cookies if you wanted a little crunch with them. They sound great. Wondering if you could sub EVOO for the shortening?

^^i plan to use olive oil in place of the shortening...maybe 1/2 butter, 1/2 olive oil. pumpkin baked goods are my favorite to bake & i've found that olive oil lends itself very well to pumpkin recipes...good flavor.

Here's another cookie recipe; my mom has made this for years and they're delicious. I'm not a pumpkin fan and these don't have much if any pumpkin flavor.

PUMPKIN CHOC CHIP COOKIES

1/2 C softened butter
1 tsp. baking power
1 1/2 C sugar
1 tsp. baking soda
1 egg
1/2 tsp. nutmeg
1 C canned pumpkin
1 tsp cinnamon
1 tsp. vanilla
1 C chocolate chip bits
2 1/2 C flour
1/2 C. chopped walnuts

Cream butter and sugar. Beat in egg. Add pumpkin and vanilla and beat well. Add remaining dry ingredients and stir. Then add walnuts and chocolate chips. Drop by teaspoons on a greased cookie sheet and bake for 15 to 20 minutes at 350.

ETA: She's never made them with the walnuts, so if anyone wants to omit nuts I can vouch that they still taste delicious!
