Stuffed baked tomatos are good! The way I have done plain tomatoes:
Get several nice tomatoes (one per person). Slice off stem top. Sprinkle with Cavenders (or your fav) Cover with lots of cheese (I like Cobly Monterey Jack already grated) Bake at 350 for about 15 minutes (check, depends on size)
I stole that idea after a nice dinner out with baked tomato instead of potato. Makes a nice change.
I didn't start out to collect diamonds, but somehow they just kept piling up.-Mae West

Apparently this recipe was popular in the early 1900's. I had never heard of it til I came across it in a cookbook.

    Scalloped Tomatoes

1 can diced tomatoes, or 1 can stewed tomatoes chopped up, or the equivalent in fresh tomatoes, diced
    4 Tbs butter
    1 cup breadcrumbs
    1 onion, chopped
    1/2 tsp sugar
1 tsp dried basil (my addition, optional)
    salt & pepper to taste

Saute the onion in about 2 Tbs of the butter until transparent, but not quite caramelized. Melt the remaining 2 Tbs of butter and mix it into the breadcrumbs. Combine tomatoes, sauteed onions, sugar, salt, pepper, and basil in a saucepan, then stir in the breadcrumbs. Simmer about 15 to 20 minutes, (30 to 40 if using fresh tomatoes) stirring occasionally.
This sounds good!! I have so many tomatoes to use up, so I may need to try this!
white, black, puerto rican/everybody just a freakin'/good times were rollin'.
