Tried the recipe last night and my husband and son loved it. My husband was impressed because he was sure it was fried chicken. HAHA fooled him. Thanks Glasgow

2/3 cup fresh lemon juice
2 tsp dried oregano, crumbled

Preheat oven to 375 degrees. Arrange chicken, potatoes and garlic in a roasting pan. Season with salt and pepper. Pour broth over chicken. Whisk olive oil, lemon and oregano. Pour over chicken. Bake until chicken is baked through and golden brown and potatoes are tender, basting occasionally with pan juices -- about 1 hour, 15 minutes.
HA! You beat me to it!
One thing Id like to remark on, just something that I personally do differently, is that I never use broth, only olive oil in abundance. It makes a huge difference, as the potatoes will be much tastier and more like oven baked. I always find that olive oil does wonders both in flavcour and in consistency. Not to mention that its the healthiest thing ever.

Glad it worked for you, Sammy. I like it because it mimics fried chicken without all the grease, it is easy an quick, and you can vary the flavors. You can also eat it cold if you have leftovers.

Take chicken parts, any parts you like (I take the skin off, again, up to you). Dip the parts in milk, then roll them in Bisquick (sounds gross, but it's not) Then bake in the oven in a pan with a little oil on the bottom, so they don't stick. Turn them over half way through cooking. They come out like fried chicken, but not as greasy. Sometimes I add different spices or hot sauce to the milk or Bisquick to vary the flavor. Nice comfort food.
that worked out great, decided to try it out at my friends place *at home we don't actually use our kitchen*

French chicken. I take a little bit of butter, mixed with French mustard and taragon and a little bit of parsley. Cut the chicken in half and spread it in the cut then put it on the top and bake it. I used to have this a lot.

Another one was Chilli, Lime and ginger with a bit of olive oil.

All skinless of course.

^ The chilli, lime and ginger reminds me of another recipe i have started making recently- chicken rubbed with fresh, chopped chilli, chopped garlic, ginger and honey. Really nice.

I love it. More Bisquik chicken converts. It is tasty, isn't it, and not too guilty, especially if you use low fat milk and the lighter Bisquik. And I have used Pam in the baking pan, rather than oil. Glad to share with you guys!
