I was flipping through a magazine at work when I was on my break and wrote this down b/c it sounds REALLY good. At least I hope it is since I was late getting back on the clock b/c I was copying it down
Ingredients:
4 fresh (6 oz.) salmon fillets
3 tbsp olive oil
1/4 cup sugar
1 tsp dry mustard
dash cinnamon
1 tbsp paprika
1 tsp unsweetend cocoa
1/4 cup chili powder
1 tbsp ground cumin
2 tsp freshly ground black pepper
1 1/2 tbsp coarse salt
Heat grill to medium high.
Combine sugar, mustard, cinnamon, paprika, cocoa, chili powder, cumin, pepper, and salt in a shallow dish. Pour oil into another. Dip salmon in oil and tap off the excess. Dip fillets in spice mix to coat both sides and around the edges. Pat mixture in place. There should be some of the spice mixture left over when you are finished.
Grill salmon until it just begins to flake-about 4 minutes per side for 1-inch fillet (add/subtract based on thickness). Serve on shaped garlic mashed potatoes with chinese long beans. You could also try grilled asparagus or green beans instead of the long beans. Drizzle with Chinese Mustard Sauce. Serves 4.
Chinese Mustard Sauce
1/4 cup dry mustard powder
1/4 cup sugar
2 tbsp hot water
Combine mustard powder and sugar, mix with the hot water.
