As usual, this is a vague recipe that needs some creative input from whoever cooks it (plus whatever is in your fridge) but the basics are dead easy, quick and foolproof.
1 chicken breast
A few slices of ham, prosciutto, bacon, pancetta, whatever
Cheese - mozzarella, cheddar, parmesan, brie, blue, swiss, whatever
Herbs - fresh or dried basil, oregano, thyme, parsley, pesto sauce, whatever (even mint!)
Make a deep cut lengthways in the chicken breast and stuff with cheese slices and herb combo of your choice. Fold the breast back over and wrap firmly with a few slices of ham, bacon, etc etc to it's totally enclosed.
Put in oiled (spray is perfect) baking tray, cover with foil and bake in hottish (180C) oven for about 20 mins. Remove foil and bake a further 5 mins to crisp.
Serve with salad and/or veggies of choice.
You can really experiment with this and it always seems to work.
