    Default Cinnamon-Orange Cupcakes with Cream Cheese Icing

    i made these cupcakes for my hubby for valentine's day on saturday. he absolutely loved them & so did i. they were very easy, too, & the base recipes that i used needed very little tweaking.

    1 cup all-purpose flour
    tsp. baking powder
    1 tsp. ground cinnamon
    1/8 tsp. salt
    cup whole milk
    4 tbsp. unsalted butter, at room temperature
    2 large eggs
    cup plus 2 tbsp. sugar
    2 tsp. grated orange zest
    1 tsp. vanilla extract

    Preheat the oven to 350 F. Line a 12-cup cupcake pan with paper liners. Sift the flour, baking powder, cinnamon and salt in a small bowl. Stir milk and butter in a small saucepan over low heat just until butter melts; set aside.

    In the bowl of a stand mixer, beat eggs and sugar until thick enough for the batter to fall in a heavy ribbon when the beater is lifted, about 5 minutes. Beat in orange zest and vanilla. Stir in butter & milk mixture. Add the flour mixture; beat just until blended. Divide batter evenly between cupcake liners. Bake until a tester inserted in the center comes out clean, about 15-18 minutes. Cool completely on wire rack, before frosting.

    1/2 cup of butter (1 stick), room temperature
    8 oz of Philly cream cheese (1 package), room temperature
    2 - 3 cups of powdered sugar
    1 tsp. vanilla extract
    1 tsp. lemon juice

    With an electric mixer, mix butter & cream cheese together on medium speed until smooth (about 3 minutes). Add the vanilla extract and mix. Slowly add the powdered sugar. Keep adding until you get to desired sweetness. Either spread on cooled cupcakes with a blunt knife or spatula, or spoon into a piping bag to decorate.
