1 cup brown sugar
2-3 tbsp balsamic vinegar
1tbsp (more/less according to taste) of your choice of chopped rosemary, thyme, lemon rind, grated ginger (delicious!), any spice like cayenne, star anise, cinnamon. You could also try mustard, chilli or curry powder. It's entirely up to you. Experiment!
3 cups unsalted pecans
Spread nuts in a single layer on baking paper lined tray in a hot'ish oven (around 200C) for 10-15 minutes. Watch they don't burn!
Leave to cool and then break into a serving dish.
If they are still sticky when cool they need longer cooking.
