    Default Mom's Easy Toffee... a Christmas classic

    this is a very popular candy with our friends & family during the holidays. my mom has made this as long as i can remember & so did her mom. it's one of those things that people always ask about this time of year, so she always keeps some on hand to give away.

    1 c. butter
    1 c. brown sugar
    1 c. chocolate chips
    ½ - ¾ c. chopped nuts (optional...but, i prefer it with)
    graham crackers (broken into ¼s, on perforations)

    Preheat oven to 350*. Butter a cookie sheet & cover with graham crackers & top with nuts, if using. Melt butter over low heat, add in brown sugar. Over medium to medium-high heat, bring to a full rolling boil (one that can’t be stirred down), stirring constantly. Boil exactly 2 minutes.

    Pour syrup over graham crackers & bake for 10 minutes. Upon removal from oven, sprinkle with chocolate chips; allow chips to melt enough, then spread over top. Cool in refrigerator until set, then break into pieces. Store in fridge.

    A friend made this about 2 weeks ago. I'd never had it before, but it was really good. Very rich, so you can only eat a little bit at a time, though.

    I love toffee! I have never heard of making it with graham crackers. I have to try it!
