    Default Moist Pumpkin Bread

It's not the fall without pumpkin bread!! We just made more of this last week, it disappears quickly. We like to add a little bit of butter on a warm slice of it.

    • 1 (15 ounce) can pumpkin puree (I use Libby's)
    • 4 eggs
    • 1/4 cup vegetable oil
    • 1/2 cup applesauce
    • 1/2 cup butter
    • 2/3 cup water
    • 2 cups white sugar
    • 1 cup of brown sugar
    • 3 1/2 cups all-purpose flour
    • 2 teaspoons baking soda
    • 1 1/2 teaspoons salt
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1/2 teaspoon ground cloves (I have made this without cloves and it was still delicious)
    • 1/4 teaspoon ground ginger

    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
    2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
    3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

I don't blame you. I have a chocolate chip cookie recipe that I get compliments on all of the time. I think I will share with you guys though because it's so good.

We should have a bake off! I love baking!

Well, if there is a bake off then we have to ship the bread UPS overnight. God knows if we mail the bread through the post office they will be bricks when they are delivered 2 weeks late.

Over the years I've tried very hard to like pumpkin bread/pie/soup but I'm always disappointed. I think it's because it's too sweet even before you add all the spices and flavourings. I have the same problem with sweet potato/kumara. But for the sake of fairness I will try your recipe DD and get back to you. Hang on, 3 CUPS of sugar?!?!?!?!?

    astray recipes: Mason jar cakes

another twist on pumpkin bread. Bread in a jar. I don't use this exact recipe but I do make it in jars. Same for applesauce cake/bread.

Bread in a jar? How does that work, can you bake in mason jars?
*ok, I just looked at that recipe link and saw that you can indeed bake in mason jars--Never knew that!

Okay, made this last night. Very good, thumbs up! Even though I accidentally put in almost twice as much apple sauce. And you left out what to do with the butter in the directions. I ended up having to mash it in the pumpkin-water-oil-applesauce mixture, but it didn't seem to make a difference in the end. Still turned out yummy!

I used pumpkin pie spice mix instead of getting all those spices separately--and upped it to about 5 tsp. because I like it spicy. Good recipe.

when you make it in the mason jar and seal it like that it stays super moist. Never seems to stay in the jar very long though!!
