This is a quick, easy, and delicious recipe. I don't have specific measurements, because it's kind of just something you decide as you go. My family really enjoys it.
Ingredients:
4-6 Fish filets (I like to use a light tasting fish, like Tilapia, but anything will work)
1 jar Salsa (I use medium to hot salsa... you may not use the whole jar).
Crushed corn chips (for extra flavor, consider using Fritos)
1 avocado
Instructions:
-Preheat oven to 400 degrees F.
-Rinse your fish in cold water, pat dry with paper towels, and place in a lightly greased 8 x 12 baking or casserole dish.
-Pour salsa over the top of fish, completely covering the filets.
-Top with crushed corn chips
-Bake (uncovered) for 15-20 minutes, or until fish is flaky.
-Remove from oven and top with sliced avocado before serving.
If you want to make this for your family, have your kids help by crushing up the corn chips!
