Zippy Zucchini Bake
This is easy and good.
Easy Zucchini Bake
1 can tomato soup & 1 can water
1 cup uncooked rice or quiona
1 onion, thinly sliced
1 - 2 cloves garlic
2 tbsp butter
1/2 tsp salt
1/2 to 1 Tbsp dry basil or 1 cup fresh, chopped
1 cup grated cheese (I usually use sharp cheddar)
2-3 zucchini, thinly sliced
Preheat oven to 375. Heat soup & water until boiling. Pour into lightly greased casserole dish. Stir in rice, onion, garlic, butter, salt and basil. Cover tightly & put pan in oven for 30 min. Remove cover & stir in zucchini & cheese (leave some cheese to sprinkle on top). Continue baking 10 minutes.
Serves 5-6.

I've made it a few times, but I prefer zucchini as a vegetable for some reason. Preferably with cheese.
One easy way to use zucchini is to slice a couple into finger shapes, place in shallow pan with olive oil, lemon juice, a little garlic salt or powder, and Parmesan cheese. Bake for about 15 minutes, turning once. The result is zucchini fries. They're great as an appetizer, but best served hot.

OK, in a valiant effort to use up some of the giant zucchini currently adorning my kitchen, I am going to make this tonight. It is really yummy. My sister, who used to be a chef, came up with it a few years ago. I will probably use some leftover organic tomato and roasted garlic sauce instead of the soup, but I don't think it will make much difference.

Damn-you already made it?? Do you think Pepper Jack or Colby cheese would work? This beats the heck out of zucchini bread! I have tried it & its OK-not fab though.

I think either cheese would be good, although I lean towards the pepper jack. I agree with you about the bread -- it's not my fave either.
