Re: easy sauce for poultry or beef
My old standby is a little olive oil and butter, red or white wine depending on meat or fowl, a little chopped onion (optional) and garlic, a little lemon juice or a spoonful of tart preserves like strawberry, mixed with the pan juices. I also like to add cilantro or parsley for colour and flavour, and occasionally, hot sauce. Low-cal but yummy. You could add milk or cream, but that makes it more fattening.
