    Default Caprese Salad



    Along with the green tomatoes the farmers market was also filled with perfectly ripe locally grown red field tomatoes. I had been waiting for the fresh field tomatoes so that I could try a caprese salad. A caprese salad or a insalata caprese is a simple salad consisting of fresh tomatoes, mozzarella and basil. The salad can be seasoned with olive oil, salt and pepper and maybe even a touch of balsamic vinegar. For my caprese salad I decided to spurge a little and I got some imported Italian fresh buffalo mozzarella. The caprese salad was really good! It was nice and fresh and tasted like summer. The buffalo mozzarella was soft and had an amazing texture without having a strong which only accentuated the flavours of the tomatoes and basil.

    Ingredients:
    1 fresh ripe tomato (sliced)
    1 ball fresh mozzarella (sliced)
    1 handful fresh basil leaves

    Directions:
    1. Assemble salad.

    I love caprese salad! Buffalo mozzarella and tomato...mmm...perfect for summer.

    mmmm, one of my favorite salads ever. i think i want this for dinner now. but, i just don't want to go to the store for the cheese.

    Hint: Serve the tomatoes at room temperature, not straight from the fridge. More flavour.

    I am so craving one of these salads for tonight.

    I think it was at Capital Grille about a year ago the salad had like 4 different types of tomatoes; it was so fucking good.

    I know, I know - but people do it. I try to grow a few tomato plants every year with mixed results but the tomatoes I do get straight off the vine and warm from the sun are sensational.

    The only other thing I'd add to the salad is a drizzle of really good extra virgin olive oil and perhaps the tiniest spritz of balsamic vinegar to give it some 'lift'.

    mmm, i agree on the bit of balsamic. balsamic is the yumminess.

    I like a LOT of balsamic vinegar, tiny bit of oil. The tangier, the better! My esophagus and stomach lining must hate me but I don't care because it's deeeelicious!

    Good call on the kalamata olives in the picture too.

    I had some delish home-grown tomatoes warm off the vine for dinner tonight. A little olive oil, a little balsamic, fresh basil and creamy goat feta -- divine.
