No-bake berry pie with fruit glaze

5-6 cups berries, picked over, washed and well drained
2 tbsp. cornstarch
3/4 cup sugar
3/4 cup water (one cup if berries are bigger)
1/4 tsp. salt (optional)
1/2 tsp. almond extract (optional, but it really brings out the flavour)
1 9-inch pie crust - plain tastes better than graham cracker crust

Bake pie shell and let cool. Set aside 1 cup of berries. Once pie shell is cool, layer fruit in shell.

Put one cup of mashed berries, sugar, water, cornstarch and almond extract in a heavy saucepan. Mix well, making sure the cornstarch doesn't clump. Bring to boil, stirring constantly. When mixture thickens remove from heat and pour over pie shell. Let cool, then chill for at least one hour in the fridge.

Serve with cream, whipped cream, ice cream or all on its own.
