I made this last night and I'll definitely be making it again. It is quick and easy and there's none left, dammit.
1 package softened cream cheese (I use light)
1 can refried beans (I use light with green chilies)
1 1/4 to 1 1/2 cups salsa, medium or hot
1/4 cup chopped cilantro (optional, but good)
1 1/2 cups grated sharp cheddar or combination cheddar/jack or cheddar/skim mozzarella
2 or 3 chopped green onions
1 can sliced black olives, green chilies or jalapenos (optional)
Turn oven on to 400 degrees F
Spread cream cheese in 9-inch rectangular or round pan
Spread refried beans on top of cream cheese
Mix cilantro with salsa and layer on top of beans. If using a runny
salsa, use less.
Spread with grated cheese
Top with green onions/olives/chilies
Bake for 15 minutes, or until cheese is bubbly and brown. I baked it about 12 minutes and broiled it for a couple more minutes because I like my cheese a little crusty.
Serve with corn chips or crusty bread. Sourdough is best.
