Default I am looking for the Leek Soup recipe

someone posted that over at the last forum and it sounded so yummy and I never got to copy the recipe down.

Here you go. I didn't cut and paste a few recipes I wanted either. Maybe I'll start a thread asking for people to re-post their recipes.

Leeks are in season now so I thought I’d share my fave recipe for leek soup. It’s wonderful on a cool day, and incredibly easy to make.

Nanny’s Irish Leek Soup

4 medium leeks cut in 1/2 inch slices
! medium diced onion
2-3 diced celery stalks (optional, but I like them)
4 medium potatoes diced
4 cups chicken or veggie broth
1 cup sour cream (I’ve also used 1/2 yogurt, 1/2 sour cream)
11/2 tbsps. butter (or olive oil and butter mixed)
Pepper to taste

In a large saucepan melt butter and add leeks, onions an celery.
Cook covered on medium heat until tender, stirring occasionally.
Add potatoes and broth and simmer covered for 30-40 minutes. Add
more broth if necessary.

Add sour cream and heat to serving temperature but do NOT boil. Season with fresh-ground pepper and serve immediately.

Good with sourdough bread.

You're welcome. You can also use cream instead of milk and full fat sour cream and/or yogourt but I never do.

Was it the one that I posted? The potato, Leek, Garlic and bacon soup?
