Apple, Bok Choy, Ginger Slaw
makes 4 servings
Ingredients:
1/2 cup water
1/4 cup sugar
2 medium apples, cored and grated with skin.
2 cups of bok coy, julienned (use the whole thing)
1/4 tsp red pepper flakes
1tsp of ginger
2 tsp white wine vinegar
1tbsp and 1 tsp of soy sauce
2tsp of sesame seed oil.
Instructions:
in saucepan, combine water and sugar. Over medium high heat, bring to the boil and dissolve sugar. Stir untill sugar no longer settles. In a large mixing bowl combine the rest of the ingredients. Add sugar water mixture. Refrigerate for at least an hour before serving.
Chickpea Burger
Ingredients:
2 cloves garlic, peeled & minced
1/2 medium onion, diced
1tbsp rosmary
5-10 red pepper flakes
2tbsp flaxseed
1 540g can of chickpeas
1/2 cup of unprocessed wheat bran
1/4 parsley
1/4 carrots - grated
1/4 cup egg whites
1/4 tsp salt
1/2 tsp pepper
2tbsp olive oil
Instructions:
In a food processor blend garlic, onion, rosemary, red pepper and flaxseed. Add and combine chick peas, wheat ban, parsley and carrots. Do not over process. Transfer to a bowl. Mix egg, salt and pepper. Form 4 patties. Cover and chill for an hour.
To cook: Over a medium heat, add oil to a non stick skillet. Cook untill golden (approx 4 mins on each side)./
