Cajun Coca Cola Salad
Not very salad like and I'm sure very bad for you but here it is.
16 ounces of Coca Cola
1 large can of pitted black cherries (marischinos can do in a pinch)
8 ounce bar of cream cheese
1 16 ounce can of crushed pineapple
2 small boxes of black cherry gelatin
1 package of plain gelatin like Knox
3/4 cup toasted and chopped pecans
Drain pineapple and cherries, saving the juice. Heat juice until hot. Pour over cherry gelatin and plain gelatin. Dissolve in juice and chill until it just starts to gell. Pour in Coke and place in the refrigerator. Take cream cheese and roll into small balls rolling each ball in the pecans until all the cheese and pecans are done. Once it's started to gell again put cheese balls, cherries and pineapple in a gelatin mold and pour gelatin Coke mixture over the fruit and cheese. Let chill overnight. Delicious served on a bed of lettuce.

I don't know...I'd have to taste this concotion to be convinced! I don't like jelly salads much.  Great name, though.

God, this sounds marvelous!!!! It helps that I'm in love with cream cheese. I'm gonna make this and bring it to my mom's Christmas party...sounds like something that'd appeal to her, too. Thanks for the recipe!

I also love the fact that apart from the pecans, it's all out of cans - yeeeHAH! Sorry, Gator, I'm only teasin' darl. I can't talk anyway, I cook my Christmas ham in Coca Cola!

I don't make it much but mostly because it's so gaggingly sweet. I feel like I need insulin every time I eat it. But it's a popular dish down where I come from. Some of the stuff eaten in the Deep South is horrifyingly unhealthy.

If you think that's horrifying then I won't post the recipes from an ancient Cajun cookbook I found including one for eating just when you're sick, a beef jelly made from calfs brains. The recipe is almost comical 'Take one calfs head, crack it open and scoop out brains'
I prefer if I'm making a jello salad to use sugar free strawberry jello with sliced fresh strawberrys and the cream cheese and nuts instead of the above recipe.
