Default Hunky Green Thai Curry

2-3 tablespoons of green curry paste (make your own by blending basil, ginger, garlic, red hot chili peppers, and lemongrass)

heat 2 cans of coconut milk

throw in baby corns, straw mushrooms, kaffir lime leaves, baby aubergines, and other veggies

bonless chicken, cut in small squares in a pan as well

bring to a boil and simmer for about half an hour

add lime juice and fish sauce

add lots of fresh thai basil leaves

add more red hot chilies

enjoy!

now why is it hunky?

because he made this recipe!!

THANK YOU!!! I've been looking for a green Thai curry recipe. I love the stuff but various members of the family have been converting to vegetarianism and the prepared curries always contain fish sauce. I can just omit it (and the chicken obviously) from this. Yay!

I love this stuff. I make a variation on it with different veggies -- I don't like baby corn -- but I add the chicken to mine separately since I live with a vegetarian.

It is quite fattening because of the coconut milk so I don't make it very often, but it is always a crowd pleaser.

Coconut milk is very good for you. I don't want to go into detail at this moment, but, this site is OK with information http://www.nexusmagazine.com/articles/coconuts1.html

Coconut was smeared in a campaign by the canola people...canola is horrible for you, whereas coconut isn't. It's anti-parasitic, has good saturated fats, and as well is very healing to the liver.

Today I had sea bass with coconut lime jalapeno sauce at a restaurant. Incredible.
