    Default Butter Chicken Curry

    I posted this before but people have asked for come easy, mild curry recipes. As with all curries, you can adjust the spices to taste but don't TOO timid or it won't taste of anything! And don't be put off by the apparently long list of ingredients. Everything should be available at your local supermarket or, if you are lucky to have one, your local Indian grocery store.

    2-3 tbsps butter
    1 onion
    1/4 tsp ground cinnamon
    2-3 cloves crushed garlic
    Same amount of crushed ginger
    1/2 tsp turmeric
    1-2 tsps chilli powder (or one whole fresh chilli)
    1 tbsp ground coriander (cilantro)
    400grams (14oz) chicken cut into chunks
    1/4 to 1/2 cup ground almonds
    225gm/8oz can whole tomatoes with juice
    1 tbsp tomato paste
    1/2 cup unsweetened yogurt

    Slice onions into thin wedges
    Melt butter in heavy pan until frothy
    Add onions and cinnamon until soft
    Add garlic and ginger, then turmeric, chilli and corriander (cilantro)
    When the spices have released their flavour/aroma add the chicken and saute in the spices until the meat turns white.
    Add ground almonds, tomatoes and tomato paste and mix
    Cover pan and simmer for 20-30 mins.
    Before serving, add the yogurt and heat through.

    Oh, ground almonds. I'm going to have to try adding that next time I make Butter Chicken.

    Oh I made this recipe a few weeks ago ... but with shrimp and I say "delish"!!

    Yeah, the ground almonds make all the difference. And they are actually good for you so you can eat this with a little less guilt about all that butter!

    Hubby bought Naan bread yesterday, so I took the hint and made Butter Chicken today. You're right, the almonds do make it even better! Maybe I'll try them in Tikka Chicken Masala too.
