2 cans red kidney beans, drained
2 cans green beans, drained
1 onion, chopped
1 large or 2 small green bell peppers, diced small
Extra Virgin Olive Oil
Vinegar
Cumin
Salt
Directions: Put first four ingredients in large bowl and mix. I wish I could give you exact measurements for the dressing, but in truth, I was never given any. I just play around. Using a bowl, I mix a large amount of olive oil, a small amount of vinegar, a generous amount of cumin, and a small pinch of salt. I just taste test until I believe it tastes okay. Then pour the dressing over the first four ingredients. It should just lightly mixed, not be soaking in the dressing. Tastes best when refrigerated overnight. This salad is AMAZING and oh so simple to make. You really cannot make it without the cumin. I'm sorry I don't have exact measurements, again, but I think you will find it easy enough to make without it.
