    Default My favourite nacho dip

    I'll be making this for New Year's Eve as well. Easy and so good.

    Nacho Dip

    I brick light cream cheese
    1/3 to 1/2 cup light sour cream
    I can refried beans, I like the ones with jalepeno
    I good-sized jar of salsa, or make your own with tomatoes, cilantro, green peppers and chilies
    2 or 3 green onions
    1 to 2 cups grated sharp cheddar
    fresh sliced jalepenos
    sliced black olives

    Mix softened cream cheese with sour cream and spread in a medium serving dish.

    Spread a layer of salsa, then the refried beans, then another layer of salsa.

    Top with grated cheese and cook in 350 degree oven until the cheese is melted and a little bit bubbly.

    Remove and add chopped green onions, sliced jalapenos and black olives (optional).

    You can also top it with fresh chopped tomato and lettuce, but it's incredible just the way it is. Serve with fresh tortilla chips and sliced avocado (optional).

    Guaranteed to disappear quickly.

    That sounds well tasty, I am abit of a lightweight with hot spicey foods though

    Tortilla chips + avocado + dip= heaven

    Sounds delish, but I'm like Honey when it comes to hot spicy foods. I wonder if it work without the jalepenos?

    Pretention Alert! This reminds me of the nachos we used to eat on ski trips in the Canadian Rockies. A can of Labatts (or two), a plate of hot nachos and spicy dip, terrible country music...... heaven on earth. We're going again for New Years 2009 after a very very long time and I can't wait. Oh and bland and boring doesn't work with nachos - you need SPICE and lots of it.

    If you don't like cilantro try basil or parsley or nothing. Interesting that so many people hate cilantro. I love it but only used in moderation as it can be very overpowering. No big deal.

    Even a teensy, tiny flake of a cilantro leaf can overpower the flavor of any dish to the cilantro-intolerant. If you can stand the taste of this evil plant you don't even know what it's like to live in a world of cilantro. Especially if you are a fan of Mexican or Thai cuisine.

    ETA: Basil or parsley are nothing like the noxious pungency of cilantro! On the flavor scale for the cilantro-averse such as myself, parsley rates as a mostly flavorless mild herb and cilantro would rate on the same scale as rotting flesh, sour milk, and a fetid pool of sulphuric acid. No shit! For some people, cilantro is as overwhelming as all of those combined.

    It's pretty fetid stuff for some people, but we just learn to hate it with a passion while the rest of world keeps on spinnin'!

    LOL I understand what you mean but lucky for me I can take the evil weed in fairly large quantities. I know people who are equally intolerant about anchovies which, again, I love but my tastebuds are totally shot these days so I could probably eat a Draino Surprise and not complain.
