Baked Brie
This is a diet buster, but so good. I'm using triple-cream La Rumeuer brie. I'm going to use home-made apricot jam instead of raspberry jam.
Baked Brie Recipe
Simply Recipes: Baked Brie Recipe
Brie wrapped in pastry and baked until it has thoroughly melted inside is one of the world's easiest yet tastiest appetizers. In this recipe the brie is topped with raspberry jam, surrounded with pastry and drizzled with maple syrup.
Can be prepared in 30 minutes or less.
* 1 large sheet of puff pastry dough or 1 tube of refrigerated crescent dinner rolls
* 1 round or wedge of Brie cheese
* Raspberry Jam, or other sweet jam
* Brown sugar
* 1/4 cup of maple syrup
1 Preheat oven to 350 degrees F.
2 On a stick-free cookie sheet, lay out the puff pastry or the crescent rolls flat; put brie round or wedge on top.
2 Spread jam on brie, fold dough over top. Drizzle maple syrup and place a handful of brown sugar on top.
3 Bake at 350º for 25 minutes. Let cool for 10 minutes before serving.
Serve with crackers and apple slices.

I've done this and it's divine but don't even think about the cals/fat! LOL It's great with quince jelly too - not quite so sweet as jam.

^^I put less than a third of the sugar normally called for in jam, so it's not all that sweet. I don't like overly sweet things, and I will probably leave out the maple syrup and the sugar in the recipe.

Why does everything tasty have a million calories per bite?
I love baked brie (just baked so it melts) with toast or crackers & would never have thought of adding sweet to it.

I think I will try this, minus the jam. Don't you think it would be okay without the jam, PB? Or does that help to hold it together?
I can't eat jam or jellies. The consistency of it gets me everytime.

This does sound good, but I can feel my waistband getting tight just reading the recipe.

I make this with black currant jam under the puff pastry. It is delicious.

I would like to make this tomorrow for a birthday celebration I'm having with a friend. It's a girls night, and we are having some appetizers, wine and champagne, and a light meal.
I've never had brie. What kind of flavor does it have?

That sounds a good evening!
Brie doesn't have a strong flavour unless you get a very ripe one (and then people throw it out of my fridge!), its kind of creamy, tho.

Some people cannot stand the smell of cheeses. I have to say though, some strong cheese does smell of stinky feet.
Brie= tasty
