Default Cream Cheese Tarts/Mini Cheesecake

2 (8-ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21-ounce) can cherry pie filling or other pie filling

Preheat oven to 350 degrees F.
Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or pie filling of your choice
Makes 12 tarts

I was trying to come up with a dessert to take to a holiday party that was sugar-free or at least low in sugar. I think this recipe will work, just using sugar substitute. Only thing was the vanilla wafers, and I looked in my pantry. I have an unopened package of sugar-free chocolate covered graham crackers. As long as they're still good, I think I'll use those at the bottom.

I'm planning on making them Wednesday evening, since the party is on Thursday. I'll let you know. If they turn out gross, I'm just not bringing anything I think it will be fine, the only question might be about the cookies, but as long as they aren't stale, I think they'll be fine.

The graham cracker cookers were indeed stale, yuck! But I had to return a dvd, so I popped into the grocery store and got some of the sugar free chocolate covered shortbread cookies instead.

They turned out pretty well. They aren't extremely pretty, but they taste yummy!

Funny enough, when I went to check my Betty Crocker cookbook to see how to tell when cheesecake is done, I found almost the same recipe, only it called for almond extract or amaretto. I have amaretto, but that wouldn't have kept it sugar free!
