This is my sister's potato salad and it's great. I'm making it this weekend for my son's birthday. You basically adjust it as you go so the ingredients are approximative.

-5 pounds of red potatoes boiled and cut into pieces

-2/3 cups of canola oil
-1/3 cup of red wine vinegar
-salt & pepper to taste
-a dash of paprika
-2 tablespoons of dijon mustard
- a pinch of italienne spices
- 1 tablespoon of sugar
- a pinch of chili pepper flakes

Mix the dressing together then add to the potatoes. Once this is done you add enough mayo with a bit of dijon mustard in it to make it creamy. Top with chives and bacon bits.
