Default The most romantic French toast ever

French Toast with Mascarpone and Blueberries
French Toast with Mascarpone and Blueberries - Food Network Canada

* 1 cup of fresh blueberries
* 1 x lemon, zested
* 1/2 cup mascarpone cheese
* 1 x egg yolk
* 2 x eggs
* 1 cup milk
* 1/8 cup melted butter
* 1 1/2 cup whipping cream
* 1/2 cup of brown sugar, plus some for sprinkling
* pinch of cinnamon
* 2 tsp vanilla
* 1/4 cup rum
* salt
* 1 x loaf brioche bread, crust removed and sliced 1 inch thick

Directions:
French Toast with Mascarpone and Blueberries

1. Preheat oven to 325°F.
2. In a bowl mix together the mascarpone cheese and lemon jest.
3. In a separate bowl combine eggs and yolk with milk, butter, cream, brown sugar, cinnamon, vanilla and rum. Add a pinch of salt for taste.
4. Take bread and soak in egg/milk mixture. Squeeze out excess.
5. Place bread in a buttered 9 inch baking pan. Squish each piece in until pan is full and bread is in there nice and tight. Top with fruit and cheese mixture. Repeat with remaining bread. Sprinkle top with brown sugar and place in oven for 45 minutes or until golden brown.

You could do an easy cheat version that would taste almost as good. Get some organic frozen buckwheat blueberry waffles -- I know, but they sell them at Whole Foods for $2.49 a dozen. Then buy some fresh berries, wash them, and after the waffles are toasted, serve with real Canadian maple syrup and enjoy...you could also use Cool Whip or something like that with the syrup, if you prefer. Dead easy.
