Here's three of mine. Dead easy and delicious.
I bag fresh baby spinach leaves, organic is best
1/3-1/2 cup toasted walnuts, organic is best
1/3 cup or more to taste quality Roquefort, Stilton or Gorgonzola cheese
I large pear, slightly unripe
Crumble cheese into salad. Slice pear into thin wedges. Chop walnuts lightly and sautee until toasted in small amount of olive oil. Mix gently into salad.
Dress with simple olive oil and red wine vinegar dressing. Sometimes I don't bother with dressing, as the cheese is enough for me.
Put fresh arugula leaves into a bowl. Dress with lemon and freshly grated Parmesan. Yum!
Easy Endive "Salad" Appetizers
Wash fresh endive leaves and arrange in circle on large plate. Sprinkle with pomegranate seeds. You can add a cream cheese dip to the leaves, or serve it with a red pepper hummous dipping bowl in the middle of the plate. I had this over the weekend and it was delicious and pretty to look at, too.
