Favorite Salad
What is your favorite salad? I'm not a big salad eater but I want to start eating healthier. I'd like to know some neat salad ideas and just see what people like!
Right now, I'm really into the Wedge Salad.
It's just a half head of Iceberg lettuce topped with blue cheese crumbles and dressing and crisp bacon bits. So simple but so good!

A really good salad is one of my favorite things to eat. Love spinach, and the different varieties of lettuce, etc. I like to throw everything in; chick peas/black beans, different cheeses, pickles, olives, jalapeno's, any fresh veggies, even salsa and nachos.
Why is it though that everyone else makes a better salad than you do though? I HATE THAT.

I love wilted salads with toasted walnuts or almonds, blue cheese and fruit, especially pears.

i like mixing all sorts of lettuce, spinach, doucette, ruccola, etc... everything except iceberg. some cherry tomatoes, goat cheese, and prosciutto ham. and as dressing just a plain vinaigrette - olive oil, salt, pepper, dijon and balsamic vinegar.
another great one is doucette, fried little bits of bacon (or just toast some little bits of ham in a pan if you want a healthier alternative) (and some crushed walnuts if you like but i prefer it without), and the same vinaigrette as for the first salad.
romaine lettuce, ruccola, tuna, tomatos, hard boiled egg and a bit of corn. same vinaigrette
endives, with carrots and walnuts. with a vinaigrette of walnut oil and cider vinegar, salt and pepper

I like to make a tropical salad, mixed greens with mango and papaya chunks, with a vinaigrette of olive oil, honey, cider vinegar and lime juice.
I also love a really nice caesar salad with romaine, fresh parmiggiano curls, tender strips of Canadian bacon or prosciutto, and crispy baguette slices as croutons.

You can't really go wrong with a really good Caesar salad, or classic salad nicoise (lettuce, tuna, egg, beans, toms) which I could easily live on forever. Anchovies are essential in both IMO.

Chicken Cesar Salad. Dole mixed lettice, Ranch Dressing, Paul Newman Garlic Crutons, grilled lemon chicken slices with shreded jack cheese.

I take a large handfull of baby spinach and romaine lettuce - mix well, add 15-20 blueberries, shredded carrot, fresh pepper and then I top it with 6 or so ounces of tuna salad (homemade).
YUM
I mix it all around so that the tuna makes a dressing for the salad.
If you like crunch sliced almonds are great to add as well.

Usually, I'll just eat a salad without cheese or any other "embellishments" and I'll put some salt over it.. maybe some lemon juice if I feel like it. But, a really great salad I discovered is something called Ebi Kani Su. I found it at a local sushi bar. It's just thinly sliced cucumber, imitation crab, and sweet shrimp in vinegar with sesame seeds. It sounds totally plain, but it tastes soo good. I tried making it at home, but it just wasn't the same.

I just had this over the weekend...so simple but AWESOME!!!
SPINACH STRAWBERRY SALAD
2 bags fresh spinach
1 sm. red onion (opt.)
1 qt. fresh strawberries, sliced
DRESSING:
1/2 c. sugar
1 tbsp. poppy seeds
2 tbsp. sesame seeds
1 1/2 tbsp. onion
1/4 tsp. Worcestershire sauce
1/4 tsp. paprika
1/2 c. salad oil
1/4 c. cider vinegar
Mix dressing early. Or use 1 bottle poppy seed dressing.
Tear washed spinach into bite sized pieces (or just use baby spinach). Place in salad bowl. Toss with dressing. Add strawberries and onion, if desired. Toss lightly. Serves 6 to 8.
I'm going to try to make it tonight, but I think I'll just use bottled fat free poppyseed to make it easier on myself.  And I'm not sure if I'll add the onion or not...the person who made it did not put onion in and I loved it just the way she did it!!!

I am having nasty belly issues right now so I have been eating very poorly. BUT I find myself eating this salad almost every other day!
Big bowl of organic spring mix lettuce
1 can of tuna
big chunk of any cheese handy, cut, crumble, cube whatever..
sliced veggies, whatever I have handy
Whatever dressing I am feeling like right now
Mix together, call it dinner!
Salads are only limited by your imagination Fonz, raid your fridge and have fun!
