    Default Russian tea cake cookies

    Disclaimer: I have no idea if these are remotely Russian in any way. I do know they're wonderful with tea & coffee.

    Posted at moomies' request

    1 cup butter
    4 tablespoons confectioner's sugar
    1 teaspoon vanilla (adjust if extract)
    2 cups flour
    1 cup chopped nuts

    Cream butter, add sugar & beat until light. Add vanilla & mix. Add flour & mix well. Add nuts - fold & mix in. Shape into balls. Bake on ungreased cookie sheet at 350 degrees for 15 - 18 minutes. Roll in confectioner's sugar after removing from oven. Roll again.

    Best after sitting a few days to develop flavor.

    I've made these and they really are delicious! We call them Wedding Cookies around here.
