I had this at a party on the weekend and it was so good I asked for the recipe. It tastes remarkably good, and quite meat-like.
1 lb string beans (or regular beans)
1/4 lb chopped walnuts
1 tbsp olive or walnut oil
1 tsp thyme
salt and pepper to taste
*** Sautee string beans and onions in oil until soft. Hard boil eggs. Using metal blades, chop walnuts in food processor. Add beans, eggs and onions. Process until smooth. Add salt, pepper and thyme. Refrigerate.
Serve with bread or crackers.
