Another yummy one...

Filling for quesadillas:

2 small jars canned mushrooms (no stems if possible)
2 cans marinated artichokes
1 bag frozen spinach
1 onion chopped
1 bag of mozzarella
1 bag of colby jack cheese or any other kind you want

Drain mushrooms, cut onion, thaw and squeeze water out of spinach, drain but do not rinse artichokes. put in large bowl and mix together. Add cheeses and mix until well combined. Put bowl in microwave and cook for a minute or two until cheese starts to melt (I find it helps get them heated all the way through when they are made without burning the outside of the quesadilla)

Heat skillet, butter side of tortilla, put in skillet, add mixture, add other buttered side.
