I love homemade carrot cake! I love to make this!
Did a mini test run of this recipe to see how it would turn out to see if I wanted to make it for Thanksgiving. It turned out well, so I'm going to make it Thursday. Thought I'd share.Healthy, it ain't.

Carrot Cake
2 cups flour
2 cups sugar
2 tsp. cinnamon
2 tsp. baking soda
1 1/2 cups vegetable oil
4 eggs
1 tsp. vanilla extract
3 cups grated carrots
Sift together the flour, sugar, cinnamon, & baking soda. Mix oil, eggs, & vanilla, stirring until well blended. Add dry ingredients to oil mixture and stir until blended. Add carrots. Divide into 3 pans and bake in layers at 325 for 30 minutes.
Icing
1 8 oz. cream cheese
1 lb. confectioner sugar
1 1/2 stick butter, melted
1 tsp. vanilla extract
1 cup pecans, chopped
Sift sugar. Add cream cheese, butter, and vanilla gradually. Cream until light & fluffy. Add pecans. Spread between layers, on top, and on sides of cake.

THE EASIEST WAY OUT IS THROUGH....
I sometimes add a small can of crushed pineapple to carrot cake and it makes it incredibly moist and tasty. It's my mother's "secret" ingredient.
