Easy baked squash
This is an easy and versatile recipe.
1 medium-sized squash or several yams (buttercorn is best, but acorn will do in a pinch)
1/2 onion, coarsely chopped
1 red pepper, coarsely chopped
1/4 cup chopped parsley (Italian if you have it)
a little butter or olive oil
1/2-1 cup grated sharp cheese -- asiago, parmesan, cheddar
salt, pepper and a little fresh or powdered nutmeg
Boil/bake squash or yams. When cool, scoop insides or remove skins and chop into chunks. Lightly mix with a little oil or butter and spices. Put onions and red peppers and 1/2 of parsley into bottom of casserole dish, add squash and press gently into dish. Add grated cheese. Bake at 350 degrees for about 25-30 minutes, then broil for 2-3 minutes until cheese is bubbly and turning brown. Sprinkle remaining parsley on top and serve.
This seems to taste best when it is slightly chunky, so don't mash yams or squash.
