Default Roasted Garlic

Ive tried to roast garlic in the oven and it turned out bitter tasting. Here is what I did, I took a head of garlic placed it in foil, drizzled some olive oil (EVOO) put it in the oven at like 300 degress for like 20 minutes. What am I doing wrong? Does anyone have a good recipe?

I usually cook mine at a higher temperature. 400 F seems to work best for my oven. I drizzle chicken broth, butter, balsamic vinegar or olive oil on the garlic bulb and wrap in aluminum foil.

Try the higher temperature, that should do the trick.

Try to roast the garlic head whole, without peeling. If you wamt, you can give it a whack with something to spread it out a bit, but don't remove the peel. That way it will be all sweet and less dry on the inside. You can remove the peel afterwards.

I toast mine at a higher temp as well, like at 425. I don't put any oil on though.
