I need an easy to make but good Mexican recipe!
Anyone have any easy to make for not very experienced cookers like me Mexican meal thats really good though???!!!???

I don't know much Mexican recipes, but I do know of Mexican Wedding Cookies. They are a dessert though. Were you looking for more of main courses? I have the recipe if you want it.

yeah a main type course but not tooo boring like plain old fajitas...plus i like cheese!

For my chicken quesadillas, I bake the chicken first. Then I saute up onions and green peppers, add the chicken, and add fajita seasoning to give it a little pep. I have a quesadilla maker, which makes it simpler, but you could then just put them together and cut them with a pizza cutter once baked. I usually do a layer of cheese, then the meat/veggie mixture, and then another layer of cheese. (I too like cheese!!)
Guac, salsa, and sour cream as toppings. Verrrry good. Sometimes I throw a side of simple spanish rice with it too.
I could search for my chicken enchilada recipe, if you're interested. Problem is that I throw a lot of stuff together instead of relying on a recipe card, too.

You can't go far wrong with a chilli con carne and tacos. There's millions of recipes out there, both with meat and vegetarian. Also, you can make it in advance (in fact it tastes better if you eat it the next day), you can keep it warm in the oven so no panics about having it ready at a certain time, it's not expensive and you can have it as hot or mild as you like (or if you over-do the chilli, a dollop of sour cream will cool it down). Just serve with a simple salad and you're ready to go.
