Default Cowboy Caviar

Ingredients:
15 oz Black beans; rinse & drain *
4 oz Ripe olives;chop & drained *
1/4 c Onion; finely chopped, 1 sm.
1 ea Clove garlic; finely chopped
2 tb Vegetable oil
2 tb Lime juice
1/4 ts Salt
1/4 ts Red pepper; crushed
1/4 ts Cumin; ground
1/8 ts Pepper
8 oz Cream cheese; softened, 1 pk
2 ea Eggs; large hard cooked, **
1 ea Green onion w/top; sliced

Preparation:
*1 can of each black beans and ripe olives. Drain and rinse the beans, Drain the chopped ripe olives. ** Eggs should be peeled and chopped. Mix all ingredients except cream cheese, eggs, and green onion. Cover and refrigerate at least 2 hours. Spread cream cheese on serving plate. Spoon bean mixture evenly over cream cheese. Arrange eggs on bean mixture in ring around the edge of the plate; sprinkle with green onion.

Serves: 12

I make something similar to this with black beans, corn, avocado, tomato, onion, cilantro, garlic,lime juice and dressing of Good Seasons with oil and vinegar. It is always a hit and I rarely have any leftovers when I make it. I serve it with tortilla chips.

What is this stuff served with?

This sounds so good, no reason to make it though. Maybe I'll have people over for movies so I can have an excuse

I was just going to make a thread on this..saw a recipe and wanted to know what people have had it. This thread came up in the search so will post in it instead.

The recipe I saw mentioned chunks of avocado. sounded more like chuckpony's version..except there were both hot and mild chopped peppers..and the corn was grilled and there was cayenne pepper in it. Also the beans were pinto beans.

anyone got any feedback on this?
