This is for all you fruit cake phobes and everyone else too. Delicious as is but could be decorated for Christmas. It's quite dense but not too sweet and the little bits of chocolate really lift it.
1/2 cup caster (fine) sugar
90g slivered almonds
125g dried figs
125g mixed peel
90g dark chocolate
1 1/4 cups SR flour
Beat the eggs and sugar until light and fluffy.
Blitz/pulse the nuts, figs, peel, chocolate in a blender (or by hand if you're keen) until a coarse'ish rubble
Fold into the egg/sugar and then the SR flour so it forms a loose dough
Put in greased 15x25cm loaf tin
Bake in moderate (180c) oven for about an hour. Test with a skewer about 10 mins before.
Cool in tin, then rack until completely cool before serving.
