    Default Easy Fruit Cake

    Easy Fruit Cake

    1 Kg Mixed fruit or ( 750 gr Angus Park fruit medley plus 250 gr Sultanas )
    2 cups orange juice or carton of iced coffee
    Soak overnight
    Mix in 2 cups SR Flour
    Mix well
    Add some chopped nuts and mixed spice if desired
    Bake in Mod oven 180c for approx 1 hour

    I've made the easy cake several times and it does work well.

    1. I wouldn't eat it hot from the oven.
    2. The OJ and the coffee are equally good but I'd probably go with OJ first for the fruity theme. But the coffee is good too. Make half quantities using both!

    The coffee idea seems like it would add richness to the flavor.

    Isn't fruit cake traditionally suppose to have the dried fruits soaked in a liqueur of some sort? I've never made it but have always wanted to try. But once that time comes to making it, I forget.*sigh
    This recipe would be marvelous for anyone who is abstaining from alcohol though.... and kids.

    Must have a marzipan topping... no?

    Some fruit cakes that are meant to be eaten right away will call for the dried fruit to be soaked in rum or whiskey or brandy. Fruit cakes that are meant to be made ahead and then stored until Christmas should be brushed regularly with whiskey or brandy. The alcohol preserves the cake so that it doesn't go mouldy.

    I like that this recipe doesn't use sugar. I've never understood recipes that call for pounds of dried fruit, a tablespoon of flour, and cups of sugar. No wonder so many people shudder at the thought of eating fruit cake! I never add sugar to mine and folks seem to like them much more.

    I wonder what would happen if I did both, soak the fruits and brush the cake regularly?
    Could I get drunk off a slice?
    Heck, I'll try anyway!

    Not a fan of using much sugar either.
