    Default Roasted Broccoli Mac Cheese

    Here's one for the vegetards. If you don't eat dairy either I can't help you I'm afraid.

    Serves 4
    Cut 400g fresh (!) broccoli into small bite size florets.
    Finely slice 2 cloves of garlic
    Put broccoli and garlic slices in roasting dish with a swoosh of Olive oil, salt and pepper
    Roast in 220C oven for 15 minutes or until a little charred
    Meanwhile cook 200g macaroni or small pasta until not quite cooked
    Finely chop the white part of a small leek and sauté about 5 mins in 30g melted butter until soft
    Add 20g plain flour and mix to form a smooth paste
    Remove from heat and add 400ml milk and 150g grated strong cheese, eg, cheddar/Parmesan and mix to make a sauce
    Mix pasta with roast broccoli and cheese sauce
    Sprinkle with a handful of grated cheese and crushed crackers for crunch
    Return dish to the oven for about 20 minutes until baked and bubbly

    A meal in itself or delicious with good quality Italian sausages. The roast broccoli has a wonderful flavour and I sometimes add a little dried chilli flakes to the sauce for some extra zing.

    That sounds yummy. But I think I'll use frozen broccoli, garlic from a jar, and cheese whiz. Ya know, to make it more Ahmurcan.
