    Default Coronation Chicken

    A British classic, invented and served at QE2's coronation banquet in 1953. There are endless variations and you can add your own tweaks as required (or not). This is the quick and easy basic recipe. Great for buffets or sandwiches.

    Serves 4
    Gently poach 2 chicken breasts in chicken stock for about 10 minutes or until cooked.
    Remove from stock and allow to cool completely and chop into bite size pieces.
    Mix:
    100g of good quality mayo
    75g mango chutney
    1 tsp curry powder
    Zest of a lime + the juice

    Fold in chicken pieces, diced celery, a handful of cashew nuts, salt/pepper. You can also add things like diced capsicum, apple, raisins, sweet corn, avocado - anything you fancy really. It's all personal taste.

    Chill and serve with a crisp green salad and crusty bread.

    Thanks for this. I love coronation chicken, we used to have it every christmas when I was a kid.
    Now I'm going to give it a go this year!

    Coronation chicken used to terrify me (evil raisins), then I actually tried some and I LOVE IT. Thank you, A*O.

    Never heard of this. It does sound good,except for the mango chutney.
    Is 10 minutes enough to cook the breasts done?

    I substitute a mango salsa sometimes. You could try that if you're not a chutney person.

    So long as it's something slightly sweet and spicy you can try almost anything. It's one of those recipes you can easily tweak to suit your taste but it's supposed to have a slightly "Indian/curry" vibe. I use a real Indian mango chutney (MD brand, grab it if you see it) which is quite strong and not too sweet but we like strong curry.

    I don't add raisins either, but many people do. Makes it way too sweet for me. I've also seen it made with pineapple chunks. Gag. I love pineapple but only fresh. Once it's added to anything "Hawaiian" it's a double gag.

    Chicken is cooked when it's cooked (test it?) but don't overdo it or it will be tough.

    Can I substitute golden raisins or grapes and greek yogurt instead of mayo? I want to make this for an outdoor gathering this weekend. I'd like to eat it too but I don't eat mayo anymore.

    Sure you can! It's a very versatile recipe. Personally, I don't add any fruit because it makes it too sweet (for me) but experiment, I doubt you can screw it up whatever you try.

    I made this last night with rice and it was great. I had a really bad day at work and went home decided to cook something comforting and it was a success. My bf thanks you too, A*O.
