    Default Stuffed Meatballs from Williams-Sonoma

    Got this wonderful recipe from my ex-bf's SW winter 06 catalong. It's time for me to make some. I "borrowed" it and posted it to Food.com - Thousands Of Free Recipes From Home Chefs With Recipe Ratings, Reviews And Tips (fka recipezaar) right after making them for a dinner party. Once I'm settled in my new house, I will be making them again.

    Ingredients

      • 1 1/2 lbs ground beef
      • 1 1/2 lbs ground pork
      • 1/3 cup milk
      • 1 cup breadcrumbs
      • 1/3 cup fresh parsley, minced ( save some for garnish)
      • 3 large eggs, lightly beaten
      • 3 garlic cloves, minced
      • 1 3/4 teaspoons kosher salt
      • 1/2 teaspoon ground pepper
      • 1/3 lb mozzarella cheese or 1/3 lb provolone cheese, cut into 1/2 inch cubes
      • olive oil ( for frying)
      • 48 ounces tomato sauce ( use premade or make your own)
      • grated parmesan cheese, for serving


    Directions

    1. In a large bowl, combine the milk and bread crumbs.
    2. Whip eggs in separate bowl. Then add to larger bowl along with the meats, parsley, garlic and pepper.
    3. Mix ingredients briefly with hands.
    4. Form into 2 inch balls.
    5. Seal cheese cube into center of each meatball.
    6. In a large skillet set on medium-high, heat oil to almost-smoking, browing meatballs for about a minute or so.

    Bitter, I'm not a huge fan of ground pork. Do you think it would still turn out well with just extra ground beef substituted in its place?

    I'm wondering about using ground turkey, or ground salmon.

    These sound good! I think I'd like the beef/pork combo. I like to add ground pork to my meatballs, but usually I don't have any on hand.

    I guess one could use ground turkey or chicken. But remember, pork fat adds flavor. Maybe you could add a little olive oil or something to the meatball mixture.

    those mags always have really good recipes. i've only made one but it was yummy.

    Me either, girl. My ex was a meat-and-potatoes fella; I miss having someone to cook for. Guess that's why I haven't made this in a while.

    Whenever I do a chili or meatloaf I do 1/3 of each, beef, pork, turkey. Instead of using the pork you could use and chicken or turkey italian sausage, just make sure you add enough moisture or an extra egg to the mix.
