    Default Laurent's Carrot Pecan Cake with Cream Cheese Pecan Icing

    I made this for Thanksgiving and it turned out really well. It's a fairly basic carrot cake recipe, but I tweaked it with a lot of pecans in both the batter and icing. If anyone tries it, please let me know if you like it.

    2 cups all purpose flour
    2 cups sugar
    2 tsp. cinnamon
    2 tsp. baking soda
    1.5 cups vegetable oil
    4 eggs
    1.5 tsp. vanilla extract
    3 cups grated carrot
    1.5 cup pecans

    Sift the flour and then add sugar, cinnamon, baking soda. In a separate bowl, mix oil, eggs, and vanilla. Slowly add dry ingredients to oil mixture and mix until blended. Fold in the carrots and pecans. Divide into 3 pans and bake in layers at 350 degrees for 30 minutes. Slide toothpick in to make sure it's done.

    Icing:

    1 8 oz. package cream cheese
    1 lb. confectioners sugar
    1 stick butter
    1 tsp. vanilla extract
    1 cup pecans

    Sift confectioners sugar. Add cream cheese, butter, and vanilla and mix until blended. Fold in pecans. Ice between layers, top, and sides of cake.

    This looks so yummy. I love carrot cake, I love cream cheese icing and I love pecans and pecan pie. I'm going to make this for Christmas.

    If you both decide to try it, I'd love to hear how it comes out! It got eaten here, but that isn't always a good indicator with my family - they'll eat anything labeled dessert almost.
