I cooked this tonight. I usually don't measure anything when I cooks so this recipe isn't exactly the same as what I did but close enough![]()
Gobo has lots of fibre, for those who may be constipated![]()

INGREDIENTS:
PREPARATION:
- 1/2 pound gobo (burdock root)
- 1/4 pound carrot
- 1 tbsp soysauce
- 1 tbsp sugar
- 1 1/2 tbsp mirin
- 1/2 sake
- 1 tsp sesame seeds
- 2 tsps vegetable oil
Peel the burdock and shred it into very thin strips. Soak the burdock strips in water for a while and drain well. Peel the carrot and cut it into short and thin strips. Put vegetable oil in a frying pan and put it on high heat. Add burdock strips and fry for a couple minutes. Add carrot strips in the pan and fry for a minute. Add all seasonings in the pan and stir well. Turn off the heat.
*Makes 4 servings
You can substitue mirin with some sherry. I just usually use sake alone. And, you can add some dried red chilli peppers, kinpira is supposed to be a little spicy. I didn't have any chilli peppers on hand tonight so I put in just black pepper and some shichimi togarashi (Japanese all spice, has 7 different pepper spices).

they sell burdock at my local loblaws, actually i'm sure you'll find everything at loblaws if you have them over therethey have a lot of ethnic selection now
I've probably just never noticed it because I wasn't looking for it.
You can find gobo/burdock root at any Asian grocery stores e.g. China town, T&T supermarket. Oh PB, maybe you can stop by at Yaohan centre on your way home from Kwantlen, they have a T&T there. They should also have mirin and shichimi togarashi (spice isle).
