    Default Mango salsa

    I love mango salsa and I make it a lot in the summer. It's easy and great served over halibut or salmon or as the salsa in fish tacos.

    1 ripe mango, peeled, pitted, and diced (about 1 cup)
    1/2 medium red onion, finely chopped
    1 Jalapeņo chile, minced (include ribs and seeds for a hotter taste if desired)
    1/2 red pepper or pimento chopped fine
    2 Tbsp fresh cilantro leaves, chopped
    3 Tbsp fresh lime juice
    Salt and pepper to taste

    Combine all of the ingredients in a bowl. Season to taste with salt and pepper. Let sit for a few minutes for flavours to meld. If it gets too watery, drain off excess fluid. I've also made this with a combo of mangos and peaches.

    Sounds fabulous, mango is my absolute favorite fruit. But everytime I hear "mango salsa" it reminds me of that Geico commercial with the cavemen. Could the cilantro be omitted or is it key to the overall flavor?

    You can omit it if you don't like it. I know my hubby's not crazy about it. I love it, tho.

    A little fresh chopped mint is a good substitute.

    I love cilantro (corriander) but find mango a bit too sweet so all that lime juice and chilli might just tone it down a bit.
