You have to have potato salad. My fave recipe:
Boil new red potatoes and cut into chunks. Leave skins on.
Let cool, then add:
1 or 2 stalks celery, chopped
2 or 3 green onions, chopped
1 tbsp. low-fat mayo
about 1/3 cup plain yogurt
Dijon mustard to taste
salt and fresh-ground pepper to taste
fresh dill (or dried) to taste
Stir salad and sprinkle with paprika. You can add eggs if you want, but I usually don't bother. Let sit in fridge for about half an hour before eating. Hot radishes are good with this too.
