    You have to have potato salad. My fave recipe:

    Boil new red potatoes and cut into chunks. Leave skins on.
    Let cool, then add:

    1 or 2 stalks celery, chopped
    2 or 3 green onions, chopped
    1 tbsp. low-fat mayo
    about 1/3 cup plain yogurt
    Dijon mustard to taste
    salt and fresh-ground pepper to taste
    fresh dill (or dried) to taste

    Stir salad and sprinkle with paprika. You can add eggs if you want, but I usually don't bother. Let sit in fridge for about half an hour before eating. Hot radishes are good with this too.

    It's really, really simple and really low in Weight Watchers points, but it still tastes good.

    1-12 oz. tub of fat-free sugar free cool whip

    1 small box of JELLO fat free sugar free butterscotch pudding (or any flavor pudding you like)

    1 large can of crushed pineapple in its own juice

    Let the cool whip sit at room temperature for an hour or so until thawed. Then mix in the Pudding and pineapple. Store in refrigerator.

    You could substitute all the full fat stuff if you wanted, I just make it with the low fat stuff since that makes it only 2 points for 1 cup.

    Mango and Brie sandwiches

    Dead easy. Buy some crusty baguettes. Slice into about three-inch pieces. Place Brie on one side. Top with fresh mango -- if they are very juicy, drain excess -- and place other slice on top.

    Absolutely fantastic. You can also make mango salsa if you want, but it is more work and not really necessary. Some people add a little thinly sliced red onion for some bite, or a little cilantro, but you don't really need it.

    Potato Salad isn't simple in our household. I use my grandmother's recipe that I call "Everything But The Kitchen Sink Potato Salad"

    Boil up red potatos. Leave skin on and cut into chunks. Add:

    2 ribs of celery chopped up
    1 onion chopped
    1 red onion chopped
    1 bunch green onions chopped
    1/2 pound fried bacon crumbled
    4 boiled eggs chopped
    chopped dill pickles
    chopped sweet pickles
    chopped green olives
    Zatarans Cajun mustard
    black pepper

    I'm craving potato salad now. I've never had it with so many ingredients, the bacon and dill pickles especially, but it sounds delicious. Shop bought potato salad doesn't compare.
