    Default Tuna Watermelon Ceviche



    4 Servings

    Ingredients
    • 5 tbsp. fresh lime juice
    • 2 tsp. sea salt
    • 1/2 tsp. lemon zest
    • 1 tbsp. fresh lemon juice
    • 1 tbsp. olive oil
    • 3 tbsp. fresh squeezed orange juice
    • 1 lb. ahi tuna, cut into small cubes
    • 2 cups seedless watermelon, cut into small cubes (mine had a few white seeds)
    • 1/2 a red onion, diced
    • 3 tbsp. fresh cilantro, chopped
    • 1 tbsp. fresh chives, chopped
    • 2 tbsp. fresh basil, chopped


    Whisk the first 6 ingredients in a small bowl and set aside. Place the remaining ingredients in a large serving bowl. When ready to serve, add the marinade to the bowl, toss thoroughly. And serve after roughly 2 minutes.

    Too much of the same color! Throw some halibut in there or switch out for a different melon. I want ceviche now.

    Tuna and watermelon are two flavors I can't imagine together, but maybe they're one of those odd pairings that combine into something delicious.

    Watermelon has been creeping into my summer meals a lot over the last few years, that looks really good.

    I make a watermelon salsa in the summer that is so refreshing. I dice watermelon, cucumber, peaches and jalapenos (amounts of each depend on personal preference). Then I drizzle with a little bit of lime juice and jalapeno juice. Sometimes I throw in some chopped mint if I have it. Always a hit - just the right mix of sweet and spicy.

    Ah, mostly I macerate it and add huckleberry vodka! But it is wonderful in a salad with feta and red onion.

    I do the feta, basil, watermelon and onion salad in balsamic. Now I add oranges and calamata olives. Big crowd pleaser.
