    Default Shrimp Durango

    Another Recipe for Cinco De Mayo

    Meal Time: Dinner Prep. Time: 60 minutes Servings: 1
    Ingredients:
    1 scoop ancho butter (recipe below)
    9 ea. gulf shrimp
    1/2 c. roma tomatoes
    1 c. spinach (fresh and shredded)
    2 T. basil (fresh/chiffonade)
    2 oz. chicken broth
    2 T. parmesan cheese (shreded)
    1 t. black pepper (fresh ground)
    fresh basil for garnish
    (see cooking directions below)

    Ancho Butter:
    1/4 t. jalepenos
    1 t. ancho powder
    2 t. butter
    1/4 t. tobasco
    1/2 t. chili powder
    1/4 t. black pepper
    1/2 t. minced onion
    1/2 t. chopped garlic
    Mix all ingredients and chill


    Directions:
    Place ancho butter in a hot skillet to saute, add the shrimp and lightly saute, add diced tomatoes and spinach, continue to saute, add basil and chicken broth, quickley reduce to half and plate with the cheese and basil.
